Quinoa and Black Bean Burritos

Hey kids, here’s a really simple meal packed with protein and fiber. It’s a shit-ton of calories, but its filling, huge, and delicious.
Stats are at the bottom.
Enjoy

1/2 cup quinoa, dry
1 can black beans
1/2 small onion, diced
Garlic, to taste
1 or 2 jalapeno peppers, diced
1 Tbsp olive oil
1 small can diced tomatoes, drained
2 large tortillas
1 avocado
Salt and pepper to taste.

Make quinoa per package directions.
Saute onions, garlic, and jalapeno peppers in olive oil until onion and peppers are soft and done.
Rinse beans, add to onion and peppers.
When done, stir in quinoa.
Add diced tomatoes.
Stir.
Slice up avocado.
Steam tortillas.
Scoop half of mixture into tortillas, add avocado.
Serve with salsa and stuff.
